Chocolate Coconut Bites
Anyone on any type of food restrictive diet understands why a recipe like this can be a total game changer! These little bites of heaven make healthy eating feel anything but restrictive! Hope you enjoy! A dear sister from church introduced me to them and I just can't get enough!
Ingredients
18 dates soaked in hot water for 10 min
1 cup of processed nuts(whatever your favs)
1tbs vanilla
1/2 cup dried coconut
2.5 tbs cocoa powder
Directions
1)Drain pitted dates and blend blend in food processor
2) Add nuts & vanilla, cocoa powder. pow dough chill for 20 min
3) Form little bite sized balls and roll in coconut
4) Chill for 1 hr
And enjoy...betcha can't just have one!
