Zucchini & Eggplant Spead/Dip

Another "Flexitarian Recipe"


1 Eggplant chopped
3 zucchini's
1 onion minced finely
6 cloves of crushed garlic
1 tbs red whine vinegar
2 tbs parmesan
salt, pepper, and whatever spices you like, I used cumin.
3 tbs olive oil


1) Mix all in one pot and cook until everything starts to look a bit sauces, and tender
2) Blend for 2 minutes in blender
3) Serve with pita bread, chips, veg, whatever!  Even tastes nice as a pasta sauce :)

Made a super yummy lunch!
