Stuffed Butternut Squash

Recently I was blessed with a "Flexitarian" cook book.  It has amazing vegab recipes, that can be subbed with non-vegan "normal" foods, if your not in the mood.  This week I made, BBQ tofu pizza, black bean burgers, Lemon, Cumin Potato Salad...and this

 Stuffed Butternut Squash


2 apples diced
1 butter nut squash
2 tbs melted margarine
1 teaspoon cinamon
1/4 teaspoon nutmeg
1/4 cup maple syrup or brown sugar
1/2 cup pecans
1/2 cup dried cranberries
1/2 cup apple juice


1) Cut squash in half, scoop out the inside.  Fill baking sheet with apple juice.
2) Place squash in baking sheet skin down, brush top with olive oil, bake for 45 min at 350 (F)
3) Mix all other ingredients together, once squash is done, stuff and put back in the oven for another 25 minutes
